GOURMET CHOPPED LAMB STEAKS
Ontario lamb provides a convenient alternative to beef
or turkey. The perfect choice for a quick healthy meal,
these patties can be served with a side of locally sourced
vegetables for a delicious fall supper.
2 tsp olive oil (10 mL)
2 tbsp finely diced onions (30 mL)
2 tbsp finely diced button mushrooms (30 mL)
1 lb ground lamb (500 g)
1 tsp fresh or dried oregano (5 mL)
1 tsp chopped mint (5 mL)
2 tbsp bread crumbs (30 mL)
1 egg
1 tbsp BBQ sauce (15 mL)
1/2 tsp Worcestershire sauce (2 mL)
1/4 tsp salt (1 mL)
pinch freshly ground black pepper pinch
Lamb patties: In a large skillet, heat oil over medium
heat. Add onion and mushrooms and sautee until tender,
approximately 3 to 5 minutes.
Once sauteed, place the items in the fridge for approximately
15 minutes to cool.
In a large bowl, add lamb, oregano, mint, bread crumbs,
egg, BBQ sauce, Worcestershire sauce, salt and pepper
and mix until well combined. Add cooled mushroom mixture
and mix until combined.
Form lamb mixture into 5 equal sized patties and refrigerate
until ready to use.
To grill: Set BBQ to medium-high. Grill patties for approximately
3 to 5 minutes per side, flipping once, or until cooked
through.
To pan-fry: Heat skillet to medium heat, cook patties
for approximately 3 to 5 minutes per side, or until cooked
through.
Makes 5 servings.
